I love potatoes in all its wonderful forms. Sweet potatoes are no exception. I’ve been incorporating more sweet potatoes in my diet due to their superfood status and health benefits. Sweet potatoes are a great source of fiber, vitamins and minerals. They’re very nutrient dense and are high in antioxidants, which can reduce our cancer risk. Sweet potatoes also support brain & gut health, immune function and healthy vision (though I suspect I may be too far gone on the vision front lol). ๐ค Source: Healthline
I bought a big bag of organic sweet potatoes from Trader Joe’s without a plan and decided to make a vegan hash with them using Beyond Meat Italian plant based sausage. The end result was flavorful, healthy and filling. As always, my family served as taste testers during Sunday brunch and they approve!
This recipe is easy to execute. It only requires a few ingredients and you can really cook this to suit your personal tastes and desired flavor profile. It works in both small and large quantities. Just adjust your spice levels!
What You’ll Need:
- Peeled & diced sweet potatoes
- 1 onion
- 1 bell pepper (any color)
- Beyond MeatTM Italian plant based sausage (or any brand you prefer)
- Extra virgin olive oil
- Kosher salt
- Cracked black pepper
- Garlic powder
- Cumin
- Red pepper flakes
Directions:
Heat 2 tbsp of olive oil in a deep skillet and add cumin, garlic and red pepper flakes directly into the oil at medium-high heat.
Once oil is sizzling, add onions, bell pepper and salt to skillet.
When onions are slightly translucent add in diced sweet potatoes, salt, and black pepper to taste. Once sweet potatoes start to brown, add sausage breaking up the links using your spatula (Hint: Be sure to remove the casing from the sausage first).
Cook on medium high heat, stirring occasionally until sweet potatoes are cooked through and sausage is browned.
