Soy Chorizo & Egg White Soufleé

Since I’ve been locked in the house like the rest of the world, I’ve been spending a lot of time creating in the kitchen. I was growing tired of my regular morning omelette and had to find a way to switch it up and keep it interesting. I’ve done soy chorizo & eggs separately many times but the idea popped in my head to combine them into a one-pan masterpiece.

The cool thing about this recipe is you can modify it any way you like based on your personal taste. Don’t like tomatoes? Don’t add them. Not into spicy? Remove the crushed red pepper flakes. I believe cooking is a personal art form, so have fun with it! Use this as a guide, but customize as you please!

What You’ll Need:

  • Oven preheated to 425 F degrees
  • 3 egg whites at room temperature
  • 1 Green onion chopped
  • Cherry tomatoes sliced in half
  • 1/4 onion diced
  • Crushed red pepper flakes
  • Black pepper
  • Sea salt
  • Dried parsley
  • Soy chorizo
  • Shredded cheddar cheese
  • Sour cream topping (optional)
  • Stainless steel or another metal pan that can be placed in the oven
