One of my favorite things to do is to come up with a meal with whatever I have in the house. Since I just got back from Vegas I haven’t had time to grocery shop so today was the perfect occasion to flex my #chopped skills. Even better when it’s a one pot meal!🥘 . . . Today I made toasted orzo coconut vegetable curry with the following ingredients from around the house: - sliced sweet yellow & red peppers - baby portobello mushrooms - broccoli florets - chopped asparagus - cherry tomatoes - shallots - 2 cloves of garlic - reduced fat coconut milk - curry powder - turmeric - salt & pepper - crushed red pepper flakes - cayenne pepper - dried parsley - chopped green onions . . . Instructions:. -Sauté peppers, mushrooms & shallots in olive oil. -Add curry powder and crushed red pepper flakes directly to the olive oil. When mushrooms are browned add in one cup of dry orzo. -Toast orzo until lightly browned & add in garlic. - Add full can of coconut milk and stir. Add in more curry powder, turmeric and salt and pepper to taste. -Add in fresh broccoli, asparagus & tomatoes -As sauce thickens add more water (approx 2-3 cups) until orzo is tender -Top with chopped green onions . . . #thedopebohemian #onepotmeal #recipes #didyouknow #vegetarian #healthymeals #healthycooking #pasta #vegan #fitness #fitspiration #wellness #wellnessblogger #cltblogger #clt #noda #cooking #foodie #instafood #foodnetwork
